It's possible the Bazzite Portal app had a hiccup right after you did your first install. You can try getting Sunshine again in one of two ways:
1. Open the Bazzite Portal app again and try installing Sunshine through that again.
2. Open your terminal and type the command
ujust setup-sunshine
3. If you get an error stating the packing is "already requested," then rpm-ostree remove sunshine and then try #2 again
