I'm back to working and I'm looking to create a minimalist work wardrobe. Any tips/advice?
What I'm mostly interested in is how many shirts and pants I should have

Kyn's right! My recommendation would be a selection that allows you to wear trousers at most twice (once preferred) a week, press* after 5 wears and dry clean after 10; and dress shirts–again–once a week, into the machine and then iron after every wear.
I mean each unique pair of trousers, and shirt.
also where you work is going to affect things
working as a personal trainer vs a lawyer vs a chef will have different needs
In my case, I'm working in IT
question 1 - how often do you want to do laundry?
question 2 - how often will you need to dress differently from whatever your workplace dresscode is (e.g. do you need to wear a suit often)
that plus the threads linked by kyn is a good foundation
I'm okay with doing laundry frequently. As for how often I'd need to change the dress code? It's prolly unlikely. I know I won't need a suit for this job
If I'm working retail, I can do fine with a couple pairs of jeans and a few company shirts. If I'm working in jobs like IT or Office work (which is my line of work), then I wear collared shirts and chinos/slacks. If they allow a more dressed down look I don't see why not
everything else will depend on your preferences - your tastes, your sense of style, how much variety you want in your clothes
