Seems to be a problem with grub2-mkconfig. I tried running it manually and get errors, but maybe it’s due to the lack of the right parameters

Could be leftover EFI entries causing a conflict, bitlocker, fastboot is also a recurring cause for errors during installation

It was leftovers from my old Ubuntu installation, that was the only thing I deleted and then it worked.
Is it failing because it tries to do a dualboot setup?
Perhaps, no clue. We have dual boot guides for handhelds now that you mention that

A previous Fedora, Nebara or another Fedora atomic desktop does conflict as far as I recall but I wouldn't think that a previous Ubuntu installation would conflict with Bazzite. I've never tried dual boot Ubuntu/Bazzite. I'll try simulate it sometime
