Fruit by the feet aren’t actual fruit, it’s using “fruit” as somewhat of an ingredient/material. Therefore, it’s using it as an uncountable noun
ex.
three fruits, citrus fruits, tropical fruits, etc. (focusing on the fruits themselves, countable)
basket of fruit, fruit bowl, fruit jelly, fruit by the foot (not focusing on the fruits themselves, therefore uncountable)
