medal, geforce experience, outplayed (the ones that i know)
do they clip lets say rounds that i do like most kills or they just record the whole gameplay and i have to edit those clips from it?
depends. for medal you will need to do it yourself
geforce experience too, but you can enable highlights (that clips multikills, deaths etc)

i downloaded medal
when i press the keybind
does it record the 2 minutes before i clicked it?
or it starts recording for 2 mins?
Records 2 min before u click it
technically it records everything, but it only saves the last [2 minutes, depending on your settings] when you press the hotkey to clip something
