Should I use PlazmaMC (server software)?
I found a server software called PlazmaMC and LeavesMC and I they both said that they were performance forks of papermc should I use them or should I use something like pufferfish or papermc?

pufferfish is the only paper fork I like thats free

just use pufferfish
leaves is more for trying to do more vanilla compatability but its not great
if ur bored and wanna play around with a couple of friends, and dont mind the unstability sure. but if ur goal is performance and stability on a public server then never use any free fork of paper unless its pufferfish or purpur. (i'd always recommend pufferfish over purpur unless you need the config options purpur provides and they cant be easily replaced by a plugin)
i do think there is a place for trying out new experimental and cursed software. just know that you're at risk! and never do it in production!
what are the actual risks of the unstability like corruption or features not working correctly
all of the above
alongside these forks very VERY often just stop updating/dev disappears
they are usually very slow to update, (usually ran by a single dev, small community so little contributors, and they have to wait for forks on forks above them to update)
they can break existing plugins, can break vanilla compatibility completely, bugs are slow to be fixed, etc
that being said, as i did mintion, there is always a place for them. these unstable forks tend to try out new ideas/optimizations. and if successful you can tend to see them get merged in upstream to thinks like paper. (altho this is very very very rare)
