How to update game version in server list?
I can confirm that you can log in from 1.17.1 to modern versions, but i dont know what updates that here
i've checked the config in every plugin

It's your proxy (in this case Velocity) that updates it automatically.
afaik
u modify what the accepted ranges are in the viaversion config on the proxy
^ actually this doesnt change the text, just prevents people from joining
but you can modify the fail reason when they attempt to join
