Try searching for "contrast lined shirt".
Ahhh, okay. So if I was, for example, getting a shirt from Proper Cloth, I could just get a different color lining in the collar and then just spread the collar open?
Yep. You can also get contrasting cuff lining as well.

That'll depend on your usual color pallet that you wear, your shirt doesn't exist in a fit vacuum and you have to be conscious of your pants, shoes, and hat (if you wear them). What color pants do you usually wear?
Dark blue, charcoal gray, black. In as much as I don't really pay close attention to this, I'd have a summer skin tone. I do tend to wear lower saturation colors, and I like green.
Blue/tan is a great place to start, green/tan works also. Having a color wheel open in a separate tab while playing around with the propercloth shirt maker is also a really great way to help.
