How do look books actually work?
Is it possible to actually get the physical book from most brands? Are they all digital? What are they practically these days

Yes it is possible to get physical books/magazines for some. Ask a retailer nicely and you might get one.
Are they expecting payment for a copy? Anyway to get on a subscription list?
I've been given them for free in the past just for asking. Sometimes they've been added in with my order when it ships.
Not all brands are going to do this though, or even print them.
some brands have old lookbooks on Ebay too
It totally depends on the brand and store. Go to any Uniqlo and they'll have stacks of them you can take. Todd Snyder will mail them to you after you order from them. Some might just make them as basically content for social media.
For high end designers your best shot is to form a relationship with an SA. I've had a few who I bought from previously send me lookbooks
