Email Routing

I thought the point of email routing was to be a sort of middleman between the sender and recipient? For example when I send an amail to the cloudfare routing email and respond with the email it routes to. They get the email from my main email?

It is quite like how you explain, for the inbound leg (e.g. when receiving messages) through your domain. Email Routing doesn't do outbound (e.g. sending messages) to arbitrary addresses. To do something like that, you would need some third party to act on your behalf. Sending messages out through your main email, will always be exposing the main email address.

using a regular domain email like from cpanel

If you already got a hosting package that includes email on your own domain, and can create e.g. [email protected], assuming that your domain is example.com, then there would typically be no point in attempting to be using Email Routing (or any other similar email forwarding services).
