Disable Mail
How do I just completely remove mail with essentials?
I don't want anyone to use it, and i dont
want it saying how much mail you have when
you join the server

You can disable that in the essentials config. Deny the permission nodes to people using your permissions plugin.

since all the permissions for essentials mail are false to begin with then you probably wont have to negate any permissions, as for notification on join about no new mail, disable
notify-no-new-mail in the essentials config.yml
