which seasons / what brands do I need to be looking at for ultra skinny black ties (see pic attached)

Cannot recommend. That said, I don't know brands that sell this.

Dior somewhat but not super skinny
But for the time definitely skinnier
This is from Vacarello Era (2020) but also still features skinny ties
Depending on formality you could look into bolo ties and those are very thin. Also Saint Laurent
