Minecraft Bedrock Server Question

I'm hosting a minecraft bedrock server for my gf and her sisters to play on, I would like to experiment with plugins and have installed pocketmine, however, I heard that the vanilla support for pocketmine is awful. I have no experience with servers however, i've heard that Nukkit is not bad in terms of vanilla support but not much plugins are available compared to pocketmine or something. (I remember a website mentioned glitches in Nukkit. Additionally, I have the option to change to Java and integrate Spigot x GeyserMC to enable crossplay where vanilla support is there and plugins galore however the bedrock features such as character customizations might not be working. I have no idea which to choose and waht to do, I've had no issues with Pocketmine but I'm also worried that my server's existing world might not be usable anymore like I can't save the world and run it back in vanilla again without the plugins.
