neither of these are working while others are working

are u on latest DEV version?
how would i check?
the seocjd image has the /essentials version data

2.20 looks like stable
thats why ur having issues.

/itemdb shows the name u should use on the signs iirc

CHERRY_LOG doesnt seem like its actual id
well now that is weird
i suggest u report it to essentials
according to spigotapi javadocs CHERRY_LOG is the correct name

seems to be a bug with essentials then
currently attempting to find their item id util thingy to see what the issue is
apparently it was fixed in a dev build from at least 3 weeks ago
maybe its just broken in that version
