Question:
If i make a coinshop, can i basically put any item in it aslong as people can get some coins for free?
Like with voting or afk rewards
or does it then still break the eula?

No, as long as you are not running a competitive minigame (generally with payouts) you are not breaking the EULA.
Though, I would recommend having a plan for multiple / different monetization options or the option to change the names / benefits of ranks and products easily.
Mojang's IPE team only provide a one week's notice before taking your server down, so being quick on complying is crucial to not lose players because your server got blacklisted.
so anything can be put on the store aslong as its ingame and ppl can obtain the store currency aswell ?
Yeah, even if it is not obtainable by normal players, again, as long as you are not a competitive server, you can have a coinshop.
And even give p2w items.
P2W is allowed (if you are not competitive)
as per the EULA, the virtual currency can't be bought. You can have a separate paid currency that can be used on only cosmetics.
You can also make stuff paid like boosters that affect all players
you can't let people pay for an advantage iirc
Note: the eula specifically notes "competitive advantage", but is not entirely descriptive on what is or isn't a competitive advantage.
It notes that the inclusion of a scoreboard does make it competitive.

but also crates & perm nodes
Are boosters for everyone
Or just the person who bought em
As long as the boosters are for everyone and the crates/permissions are only cosmetics

if the crates are paid and provide a competitive advantage, then that server isn't following the eula

aren't allowed either right? Unless you change the nameyeah, a lot of things aren't allowed, but either the EULA isn't enforced, Mojang doesn't care, or nobody has reported the server
