Is there any way to know when a user has purchased or cancelled/not renewed a server subscription?
Couldn't find anything about it in the guide. I'm on

I'm not entirely sure since they aren't available in my area but if members are given a special role for the subscription you can check member updates to see when that role is added or removed

Well it'd be difficult to manage subscriber permissions and exclusive content if it didn't give users a role
subscriptions do give a role yes
