What are some good example projects that might push me more in that direction where im forced to learn about the intricacies of the language?

this is a common question but the reality is there are so many different types of projects and libraries you can work on that you really need to narrow it down to what you want to learn.
you need to give us more to go on... do you want to get into games? dekstop apps? web apps? open source? what kinda of back ends interest you? etc.
I like to recommend making little games in the console 😛 they are small and thus you can usually write a full game in a few hours. But that probably isn't what you are looking for
nothing is production ready until it's actually been put into the hands of users 🙂
and if you have never worked in industry... there is usually a TON of work that isn't even development: managing incidents, managing enhancements, attending scrum meetings, troubleshooting (especially with end users), setting up monitoring, pipelines, managing/patching servers...
writing documentation... filling out time sheets... (ugh)
You could slap a front end on it
