Why were some builder patterns removed in favor of passing json objects as function parameters?
Having to look up documentation for the expected types instead of relying on the class methods (ex.
setName)to guide me is, in my opinion, much worse.

I don't believe slash command option choices ever had a builder
prior to objects in 0.12.0, it was
[name, value] arrays, which was obviously clunky
perhaps you're thinking of SelectMenuBuilder#addOptions?
which does still accept option builders
